Five Great Exercise Ideas for Kids

Grillin’ & Chillin’ with Bobby Flay / Cooking on the Food Network:

San Diego’s summers are heralded by the Pacific Ocean’s cold waters fighting the change of seasons with a chilly coastal fog the locals call “June Gloom,” a depressing term unworthy of America’s Finest City. June is the start of summer, kids are out of school and the beach seductively beckons me to visit several times a week. There is nothing “gloomy” about a few clouds! So join me and let’s re-brand June as “June grill n chill.”

Picture it! It’s Memorial Day weekend and you say, “Hey, next month its ‘June grill n chill.’” Now that is way cooler than “next month starts June gloom.” (insert Debbie Downer voice).

Part of my being dreams about and lives for the possibilities of creating delicious food and nothing gets closer to my inner chef than grilling season. Whether you are a hardcore, down and dirty charcoal master or no mess no fuss, throw-it-on gas guy, grilling is All American, it is part of our DNA and it doesn’t have to be intimidating.

In April I had the opportunity to cook with grilling icon Bobby Flay. Even if you aren’t a foodie, chances are you’ve seen Iron Chef Flay “throwdown.” He is a Food Network celeb whom I recently grilled with as he starts his 3rd Season of “Grill It” on The Food Network. I premiered the first episode, which aired the first weekend of June.

The experience was one for my personal record books. The set overlooked Hollywood, the skyscrapers of LA and the Pacific Ocean. Lighting equipment hung from every tree like sparkling technical fruit and the entire garage was setup just for dishes. As a former television news anchor, film productions are somewhat “usual” business, but this production blew the socks off any local television LIVE shot.

Bobby and I both grilled Wahoo, typically caught in Pacific and Indian Oceans. It’s firm like a filet of Ahi with the delicacy of Seabass. I made a Wahoo sandwich with grilled red pepper, red onion and avocado on toasted ciabatta bread layered with goat cheese and homemade cayenne aioli. Bobby created a marinara sauce with eggplant and plum: an Italian spin on fish. Both meals captured the essence of summer: flavor, fun and friends.

And so as we enter (join with me as we all shout out loud!) the month of “June grill n chill,” get out that Weber and grab your tongs.

Consider these fun, non-traditional foods to grill:
1) Vegetables: squash, eggplant, peppers, tomatoes, onion. Slice and drizzle with oil, salt & pepper. Each side takes about 3 minutes. Eat alone, in pasta or on a sandwich.
2) Protein: Seared Ahi. Put well-oiled and seasoned fish on a HIGH heat grill. On average it should take 1 minute per side. Slice and serve on a bed of spinach or sliced cucumbers with soy or citrus dressing.
3) Fruit: Fruits with pits work great: nectarines, plums, peaches even pears. Oil and place on HIGH heat, then reduce to medium heat for about 10 minutes. The sugars in the fruit will caramelize and while the inside remains cold.

Savory Thanksgiving Turkey Chili

Recipes Supplied by: Ben's BBQ and Catering
Owner: Benson Goodwyn

2 pounds ground turkey or chopped leftover poultry
1 onion diced
1-3 seeded and diced jalapeno peppers (optional)
1 tablespoon minced garlic
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon sea salt
1 teaspoon ground black pepper
1 can 15 oz tomato sauce
2 cans (14 oz) diced tomatoes
1 can (14 oz) stewed tomatoes
2 cans (15oz) bush's chili magic(starter) beans
1 bottle of V-8 juice (optional) for less thick chili.
Olive oil

Warm oil in pot and add onion, garlic and peppers until onions are translucent over medium heat. Add meat. If using ground raw meat cook for 5 minutes slowly adding the chili powder, cumin, salt and black pepper while stirring. Slowly add the remaining ingredients. Add more seasoning for taste and individual preference. Serve with shredded cheddar cheese and crackers of choice. Bring to a simmer for at least 20 minutes

Four Healthy Tips for Thanksgiving

Weight gain is strictly based on consuming more calories than you burn. This fact is simple in theory, yet difficult in practice, especially when the holidays come around. Follow these tips to ensure you eat some good healthy turkey, but don't end up looking like a plump turkey sitting on that couch.

Tip #1: Ten minutes before they fire the "start-eating gun", drink two full glasses of water. This ensures you are staying hydrated and will give you the sensation of fullness before you overeat.

Tip #2: Turkey day often involves a lot of us watching people do something active - playing football, or walking miles in a parade. Do just that. Grab some family members and have your own "parade" by taking a walk. Enjoy the outside while catching up with family and burning some of those extra calories. Love Thanksgiving football? Grab a pigskin and some of your family and have a touch football game in the yard during halftime. You will undoubtedly consume more calories so make a point to do something active with your family.

Tip #3: Most of you can spot healthy food, so find it, put it on your plate, and eat that first. Drink another glass of water after you finish the healthy stuff - and you will be more likely to pick at the desserts rather than put them down like it's your job - which will just get you into trouble.

Tip #4: Eat at least one thing unhealthy. It's the holidays and putting a lofty goal such as no desserts might send you over the deep end. Of course only you can know, but sometimes telling yourself it's okay to have a piece of cake will prevent you from gorging out when you finally give in.

Getting What You Want: Focusing your mind and bodywill help you achieve your goals

In 1990 I was 60 pounds heavier than I am today. I remember wanting to lose weight but I didn’t fully believe I could. I didn’t believe I could get what I wanted.

Why is there a disconnect between what we want and what we often achieve? What holds us back?
When you want something you don’t believe you can have —like losing weight, improving your health, or looking and feeling better—your mind will initiate behaviors to help you lose weight initially, because that’s what you want. You might lose some or all your weight, but something bizarre happens. You start to sabotage yourself by eating more, exercising less—or both. Why? Because what we believe will ultimately prevail over what we want.

Start With Vision
To overcome those thoughts, I encourage you to set a powerful and compelling vision about what you want most. Maybe it’s looking amazing in a great outfit, walking into a room with confidence and pride, running a 5K, or just feeling good about who you are. And to use healthy food, fitness and your mind to make those visions come true.
I’ve studied the works of Thomas Jefferson for 20 years and I consider him a brilliant man and personal mentor. One of my visions was to visit his home to see where he sat and had his own visions about his life, liberty and the pursuit of his own happiness.
My vision came true during a recent trip to his home and here’s the amazing thing about my trip:
• I could interpret the day simply as part of a nice trip, see where he lived, eat some food and go back home with a nice memory.
• I could interpret the day as another vision come true; validation that I control my destiny, where I go, how I look and feel, and what it will mean to me. That the event will have a tremendous positive impact on my life.

Choosing the latter may seem minor, or even silly to some, but don’t ever miss an opportunity to empower yourself. Just as I was destined to take control of my life 20 years ago, through my health vision, I choose to believe I was destined to be in Charlottesville, VA, visiting Monticello, at that particular moment in my life.

Thomas Jefferson inspired and taught me that if you’re not happy, do something to change it. With the vision that anything is possible and if our Founding Fathers can defeat a world empire with pure mind power, determination and perseverance, then I can choose healthy foods, train my body and use my mind to succeed in health and life.

What do you want? And more importantly what do you believe is possible? Make sure you believe you can get what you want or you’ll be frustrated and continually sabotage yourself. When I aligned my vision with what I believed, I lost the weight, kept it off, and fulfilled many of my dreams. Align your vision and you’ll succeed.
